As previously mentioned, I love all things pumpkin. At the time, however, I failed to mention 2 of my all-time pumpkin staples. Allow me to introduce:
Einstein Bros Pumpkin Bagel AND Pumpkin Schmear! (aka cream cheese) Pretty much the best breakfast you could ever have. In my opinion.
Cold Stone's Pumpkin Ice Cream!! Most especially famous with graham crackers, caramel, and whipped cream. It is, in fact, most delicious. Too bad a "love it" size has an excess of 800 calories!!
But... who's counting?
Pumpkin Squares
In an effort to be healthier, I have been limited to baking sweets only on Sundays. (Just for the record, I hate using the word "sweets" it makes me feel old). As such, I can't make these little pieces of delicousness until a Sunday which is at least 3 days away.
So, I got this recipe from a coworker who made it for a department social and they were quite possibly, almost maybe, better than pumpkin pie. At least that's what I remember. You should make them and taste them and then tell me what you think.
Crust:
1 yellow cake mix (leave out 1 cup and set aside for topping)
1 egg
1/3 c. soft margarine
*mix together and press into the bottom of a 9x13 pan
The Deliciousness:
1 large can pumpkin
4 eggs
1 1/4 c. milk
1 c. sugar
2 tsp cinnamon
1 tsp cloves
1 tsp ginger
*mix together and pour over crust
Topping:
1 c. cake mix (that you remembered set aside earlier, right?)
1/4 c. sugar
2 tsp cinnamon
1/2 tsp cloves
1/2 tsp ginger
2 TBS soft margarine
*mix together and sprinkle over the delicousness (pumpkin mix). Bake at 350 degrees for 60-70 minutes. If using a glass pan, bake at 325 degrees for 50-60 minutes.
Yum!
